Pate a Choux
2 Cups of Water
8 oz. of Butter
9 oz. of Pastry Flour
8 Eggs
Bring water and
butter to a boil, then add flour and dry by mixing about 1 minute in
pot. Place mixture in a mixing bowl and blend for about 1 minute to
dry. Add eggs 2 at a time to mixture. Pipe on to sheet pan and bake
20-25 minutes at 375 degrees (do not open and close oven too often as
this may cause them to fall). Can be piped into any shape.
Lady Fingers
8 Eggs, separated
6 oz. Sugar
6 oz. Pastry Flour
Separate eggs and set
yolks aside. With blender, beat egg whites while adding sugar a
little at a time. Beat whites until stiff. Then fold in yolks at low
speed (do not over stir). Then fold in flour at low speed (do not
over stir). Pipe on to sheet pan close together and sprinkle with
powdered sugar. Bake for 12-15 minutes at 350 degrees.
Ganache
2 Cups Heavy Cream
2 lbs. Bittersweet Chocolate
Place chocolate in
bowl. Heat heavy cream in pan until boiling. Pour heavy cream over
chocolate and stir until smooth. Set aside to cool. |
